Feature Recipe

Recipe for your tummy – Watermelon Salad
You will need:
• 3 cups watermelon cubed or balled
• 1 1/2 cups sliced cucumber seeds removed
• 2 tablespoons mint, thinly sliced, or small mint leaves
• 1/3 cup feta cheese crumbled
• 3 tablespoons olive oil
• 1 tablespoon lime juice
• salt and pepper to taste
Directions:
• Place the watermelon, cucumber and mint in a large bowl.
• In a small bowl, whisk together the olive oil, lime juice, and salt and pepper.
• Drizzle the dressing over the melon mixture and toss to coat. Sprinkle with feta and serve.

Alexia Ekenstam

  • Alexia is one of the wonderful recruiters here on Graeme's team. This month will mark one year with WGU! Born and raised in Utah, she grew up camping and enjoying the outdoors. This is something she cherishes from her childhood and still enjoys in her adult life. When not at work, you can find her hiking, biking, kayaking, and anything that will keep her outside. She loves the sun, but enjoys winter over summer. She is also working on obtaining her bachelor's degree in Middle School Math Education through WGU! Currently, she lives with her partner, Kaden, daughters Raelee (4) and Marley (7), and Monster, their 4.5lb Pomeranian Chihuaha. 

  • She loves Italian food, sour candy, true crime, scary stories, and DC comics (Aquaman is her favorite superhero). She'd love to travel to Sweden one day to explore and learn more about her ancestry. If she could tell her ten-year-old self anything it would be to "take my time doing the things I love. Remember where I came from and where I want to go and make sure that the interactions I have with people are genuine and leave a positive impression."
